Ingredients:

1 sheet of puff pastry (store-bought or homemade)
150 g (5 oz) ham or cooked sausage, finely chopped
100 g (3.5 oz) shredded mozzarella or other melting cheese
2 tablespoons cream cheese or ricotta
1 egg (for egg wash)
A pinch of oregano or dried herbs (optional)
Salt and pepper to taste
Instructions:
Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
Prepare the filling: In a bowl, mix the chopped ham, shredded cheese, cream cheese, and herbs. Season lightly with salt and pepper.
Assemble the bites: Unroll the puff pastry and cut it into squares (around 5×5 cm or 2×2 inches). Place a spoonful of filling in the center of each square. Fold the pastry into little parcels or triangles, pinching the edges to seal.
Brush and bake: Beat the egg and brush the top of each bite for a golden finish. Arrange them on the baking tray, leaving space between each. Bake for 15–20 minutes or until puffed and golden brown.
Cool slightly and serve: Let them cool for a few minutes before serving — they’ll be hot inside!
